Mozzarella, Spinach and Tomato melts



Something different today. I jumbled these ingredients up to make a delicious and healthy lunch which is also super quick and easy.

How to make:

  • Gently fry the spinach in a little olive oil or butter on the hob until it has wilted down into juicy greens. 
  • Toast some bread and butter (to make this a healthier snack instead of using normal sliced white bread as I did here, you could use wholegrain or rye instead.)
  • Put the cooked spinach on top of the toast and add a couple of slices of mozzarella and cherry tomatoes. 
  • Place in the oven or under the grill until the cheese has melted.
Voilà! A healthy lunch in under 10 minutes :)

Another healthy favourite of mine is mashed avocado and boiled egg on toast. Mmm....
